Ingredients
1 lb boneless skinless chicken breasts, diced
1 tsp olive oil
1/4 cup soy sauce (preferably low sodium)
1/4 cup water
1 tbsp honey
1 tbsp rice vinegar
1 tbsp cornstarch
1 tsp sesame oil
2 tsp fresh ginger, grated
2 cloves garlic, minced
Sweet gem lettuce leaves
1 tsp sesame seeds
Green onion, sliced
Instructions
Prepare the sauce: In a bowl, combine the soy sauce, water, honey, rice vinegar, sesame oil, cornstarch, ginger, and garlic. Whisk until smooth and set aside.
Cook the chicken: Heat olive oil in a skillet over medium-high heat. Add the diced chicken and cook for about 5 minutes on one side until slightly brown.
Finish cooking the chicken: Flip the chicken using a spatula and cook for an additional 3 minutes, or until fully cooked through and golden.
Add the sauce: Pour the prepared sauce over the chicken, ensuring it’s evenly coated. Lower the heat and let it simmer for 3-5 minutes, or until the sauce thickens slightly.
Assemble the wraps: Lay out the sweet gem lettuce leaves on a serving platter. Spoon the teriyaki chicken mixture into the center of each leaf.
Garnish and serve: Top the filled lettuce wraps with sesame seeds and sliced green onions. Serve immediately and enjoy!
Notes
Cut chicken evenly for even cooking. Adjust sauce thickness as needed. Store chicken and lettuce separately for freshness.
