A delightful and easy recipe for making light, airy pumpkin gnocchi that pairs beautifully with various sauces.

Ingredients

  • 2 ⅔ cups pumpkin (cubed)
  • ⅔ cup starchy potato (cubed)
  • ½ tsp salt
  • ¾ cup flour
  • 2 tbsp vegan butter
  • 2 tsp sage (densely packed)

Instructions

  1. Prepare the pumpkin and potato by steaming or boiling until tender, about 15-20 minutes; drain and cool slightly.
  2. Make the dough by mashing the cooked pumpkin and potato until smooth, adding salt and gradually mixing in the flour until soft dough forms.
  3. Shape the gnocchi by flouring the surface, dividing the dough, rolling into ropes, and cutting into 1-inch pieces.
  4. Cook the gnocchi in boiling salted water, removing them with a slotted spoon once they float (about 2-4 minutes).
  5. Make the sage butter by melting vegan butter in a skillet, adding sage, and tossing cooked gnocchi in the mixture before serving.

Notes

Use fresh pumpkin for the best flavor. Starchy potatoes like Russet or Yukon Gold help achieve perfect texture. Gluten-free flour can be used as a substitute.
