A delightful and hearty one-pot dish combining pasta, beans, and spices for a quick and satisfying meal that is perfect for families.

Ingredients

  • 1 cup elbow macaroni
  • 1 can black beans, rinsed and drained
  • 1 can diced tomatoes
  • 1 can corn, drained
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat the oil: In a large pot, heat a splash of olive oil over medium heat.
  2. Sauté the aromatics: Add the diced onion and minced garlic. Sauté until the onion becomes translucent.
  3. Add spices: Stir in the chili powder and cumin, cooking for 1-2 minutes until fragrant.
  4. Combine ingredients: Add the macaroni, black beans, diced tomatoes, corn, and vegetable broth to the pot.
  5. Bring to a boil: Increase the heat and bring the mixture to a boil.
  6. Simmer: Once boiling, reduce the heat to a simmer, cover, and cook for about 10-15 minutes, or until the macaroni is tender.
  7. Season: Add salt and pepper to taste.
  8. Serve: Spoon the chili mac into bowls and garnish with fresh cilantro if desired.

Notes

Keep an eye on the macaroni as it cooks; overcooking can lead to mushy pasta. For deeper flavor, allow the spices to bloom longer before adding pasta and liquids.
