A delightful meal combining succulent shrimp, creamy rice, and a zesty kick from lemon juice, perfect for weeknights or family dinners.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 cup long-grain or basmati rice
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 lemon, juiced
  • 1/2 cup Parmesan cheese, grated
  • 2 cups chicken broth
  • Salt and pepper, to taste
  • Chopped parsley, for garnish

Instructions

  1. Melt the butter in a large pan over medium heat until bubbly but not browned.
  2. Sauté the minced garlic for about 1 minute until fragrant, stirring to avoid burning.
  3. Cook the shrimp with salt and pepper until pink, about 2-3 minutes. Remove and set aside.
  4. Combine rice with chicken broth and lemon juice in the pan. Mix well.
  5. Simmer on low, covered, for 15-20 minutes until rice is tender and liquid absorbed.
  6. Finish by stirring in Parmesan cheese until melted and creamy. Add more broth if needed.
  7. Garnish with shrimp and parsley, then serve warm.

Notes

Don’t overcook the shrimp to avoid a rubbery texture. Let rice sit covered after cooking for best results.
