Ingredients
8 oz pasta (e.g., penne, rotini, or elbow)
1 lb ground turkey or beef
1 packet taco seasoning
1 cup diced tomatoes (canned or fresh)
1 cup black beans (drained and rinsed)
1 cup shredded cheese (cheddar or Mexican blend)
1 cup corn (canned or frozen)
2 cups chicken or vegetable broth
Salt and pepper to taste
Chopped cilantro for garnish
Instructions
Brown the meat: In a large skillet, cook the ground turkey or beef over medium heat until browned, breaking it apart with a spatula. Drain any excess fat.
Add the taco seasoning, diced tomatoes, black beans, corn, and broth. Bring the mixture to a boil.
Incorporate the pasta into the skillet, cover, and reduce heat. Cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente and has absorbed most of the liquid.
Add the shredded cheese and mix in until melted and creamy.
Season with salt and pepper to taste. Garnish with chopped cilantro and serve warm.
