A comforting blend of French onion soup and classic grilled cheese, this warm and melty sandwich is perfect for any meal.

Ingredients

  • 4 red onions, sliced thin
  • 4 tablespoons salted butter (for caramelizing the onions)
  • 4-6 slices hearty white bread (for the base)
  • 3 cups shredded Gruyere cheese (for a rich, nutty flavor)
  • 1 teaspoon sugar (to enhance the sweetness of the onions)
  • 2 tablespoons salted butter (for sauce base)
  • 2 tablespoons all-purpose flour (to thicken the broth)
  • 1/3 cup sherry wine (adds depth of flavor)
  • 1 can beef broth (14.5 oz can) (for the soup base)
  • 1/2 teaspoon dried thyme leaves (for seasoning)
  • 1/4 teaspoon pepper (to taste)

Instructions

  1. Caramelize the onions: Melt 4 tablespoons of butter in a Dutch oven over medium heat. Add sliced onions and stir to coat in butter. Sprinkle with sugar and cook for about 35 minutes, stirring occasionally until brown and soft. Transfer to a bowl.
  2. Make the dipping broth: In the same Dutch oven, melt 2 tablespoons of butter over medium heat. Whisk in flour for 1 minute to form a roux. Gradually add sherry, beef broth, thyme, and pepper. Heat for about 3-5 minutes until slightly thickened. Set aside.
  3. Prepare the grilled cheese: Butter one side of each slice of bread and place buttered side down in a skillet over medium heat. Once toasted golden brown, layer cheese and caramelized onions on one slice, top with another slice of bread, buttered side up. Toast until golden and cheese melts, about 3-4 minutes per side.
  4. Serve: Slice sandwiches and serve immediately with warm dipping broth.

Notes

Choose hearty bread to avoid sogginess. Control the heat while caramelizing onions to prevent burning.
