Ingredients

  • 1 pound chicken breast
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 2 cups chicken broth
  • 8 ounces egg noodles
  • 1 cup bell peppers, sliced
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Prepare the chicken: Place the chicken breasts in the crockpot.
  2. Mix the sauce: In a small bowl, combine honey, soy sauce, minced garlic, and chopped onion. Stir until well mixed.
  3. Combine ingredients: Pour the sauce mixture over the chicken in the crockpot.
  4. Add broth and peppers: Pour in the chicken broth and add the sliced bell peppers.
  5. Cook: Set the crockpot to low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through.
  6. Shred the chicken: Once cooked, shred with forks and stir back into the sauce.
  7. Add noodles: In the last 30 minutes of cooking, add the egg noodles to the crockpot.
  8. Finish cooking: Stir to combine and allow the noodles to become tender.
  9. Season and serve: Taste, season with salt and pepper if needed, and garnish with green onions.

Notes

Honey adds sweetness and helps caramelize the chicken; substitute chicken breast with thighs for a richer taste.
