A delightful dish combining tender beef with a rich, spicy-sweet sauce, perfect for busy weeknights or gatherings.

Ingredients

  • 2 lbs beef chuck roast
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup gochujang
  • 1/4 cup rice vinegar
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 onion, sliced
  • 2 green onions, chopped (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Prepare the sauce: In the Crock Pot, combine the soy sauce, brown sugar, gochujang, rice vinegar, sesame oil, garlic, ginger, and sliced onion. Stir until well mixed.
  2. Add the beef: Place the beef chuck roast into the sauce mixture. Turn it to coat all sides thoroughly in the marinade.
  3. Cook: Cover the Crock Pot and cook on low for 8 hours, or until the beef is very tender and easily shredded with a fork.
  4. Shred the beef: Once cooked, remove the beef from the Crock Pot and shred it using two forks. Return the shredded beef to the sauce, mixing well to absorb the flavors.
  5. Serve: Enjoy the beef over rice or in lettuce wraps, garnished with chopped green onions and sesame seeds.

Notes

Consider searing the beef before cooking for added flavor. If the sauce is too thin, thicken it by cooking on high for an additional 30 minutes.
