Ingredients
1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
¼ cup soy sauce (can use low-sodium)
2 tablespoons honey or brown sugar
2 tablespoons rice vinegar
1 tablespoon sesame oil
2 cloves garlic, minced
1 teaspoon ginger, minced or grated
1 tablespoon cornstarch
¼ cup water
Sesame seeds for garnish (optional)
Sliced green onions for garnish (optional)
Instructions
Prepare the marinade by whisking together the soy sauce, honey (or brown sugar), rice vinegar, sesame oil, minced garlic, and ginger in a mixing bowl.
Marinate the chicken by adding it to the marinade and ensuring it is evenly coated. Let it sit for at least 10 minutes.
Cook the marinated chicken in a skillet over medium-high heat for about 5-7 minutes, stirring frequently until cooked through.
Thicken the sauce by mixing cornstarch with water until smooth. Add this mixture to the skillet and stir for an additional 2-3 minutes until thickened.
Serve the chicken with garnishes of sesame seeds and sliced green onions, hot over rice or with stir-fried vegetables.
Notes
Use high-quality chicken and fresh ingredients for the best flavor. Adjust sweetness or acidity of the sauce to taste.
