Ingredients
1 pound flank steak
1/4 cup fresh lime juice
1/4 cup olive oil
1/4 cup fresh cilantro, chopped
3 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon salt
1/2 teaspoon black pepper
1 cup cooked rice (white or brown)
1 can black beans, rinsed and drained
1 cup corn (fresh, frozen, or canned)
1 cup cherry tomatoes, halved
1 avocado, sliced
1/2 cup red onion, diced
1/2 cup feta cheese, crumbled (optional)
Extra cilantro for garnish
Lime wedges for serving
Instructions
Prepare the Marinade: In a medium bowl, whisk together the lime juice, olive oil, cilantro, minced garlic, cumin, chili powder, salt, and black pepper until well combined.
Marinate the Steak: Place the flank steak in a shallow dish or a resealable plastic bag. Pour the marinade over the steak, making sure it’s evenly coated. Let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more enhanced flavors.
Cook the Rice: While the steak marinates, cook the rice according to package instructions. Set aside to cool slightly.
Grill the Steak: Preheat your grill or grill pan to medium-high heat. Remove the steak from the marinade and grill for about 4-5 minutes on each side for medium-rare.
Slice the Steak: Once cooked, let the steak rest for 5 minutes, then slice thinly against the grain.
Assemble the Bowls: Start with a base of cooked rice, then top with black beans, corn, and slices of grilled steak. Add fresh veggies: cherry tomatoes, avocado, and diced red onion. If desired, sprinkle with feta and garnish with extra cilantro. Serve with lime wedges.
Notes
For best flavor, consider marinating the steak for a couple of hours or overnight. Use fresh herbs for enhanced taste.
