A flavorful and simple slow-cooked dish featuring tender chicken in a thick teriyaki sauce, infused with garlic and ginger, and accompanied by vibrant broccoli.

Ingredients

  • 2 lbs Boneless Skinless Chicken Breasts or Thighs
  • 1 cup Teriyaki Sauce
  • 2 cloves Garlic (minced)
  • 1 tsp Fresh Ginger (grated)
  • 3 cups Broccoli Florets (Fresh, cut small)
  • 2 tbsp Cornstarch
  • 2 tbsp Cold Water

Instructions

  1. Place the chicken breasts at the bottom of a 6-quart slow cooker for even cooking.
  2. Pour the teriyaki sauce over the chicken. If using, add the minced garlic and grated ginger now.
  3. Cover the slow cooker and set it to cook on LOW for 6-7 hours or HIGH for 3-4 hours.
  4. Carefully remove the chicken to a plate and shred it into bite-sized pieces.
  5. In a small bowl, whisk cornstarch and cold water until smooth, then stir into the hot bubbling sauce in the slow cooker.
  6. Stir the shredded chicken back into the pot, then add the broccoli florets.
  7. Cover and cook on HIGH for an additional 20-30 minutes until the broccoli is tender-crisp.
  8. Serve hot over rice, garnished with sesame seeds and chopped green onions.

Notes

For best results, use a thick teriyaki sauce and fresh broccoli. Shred the chicken while hot for easier handling.
