Ingredients

1 can chickpeas (drained and rinsed)
1 pound ground turkey or beef
1 cup quinoa (or brown rice)
1 cup broccoli (fresh or frozen)
1 bell pepper (any color)
2 cups spinach (fresh preferred)
2 tablespoons olive oil
2 teaspoons garlic powder
1 teaspoon paprika
Salt and pepper to taste
Optional: 1 tablespoon soy sauce or teriyaki sauce
Optional: ½ cup Greek yogurt for garnish
Instructions
Prep the ingredients: Chop the chicken and vegetables into bite-sized pieces. Rinse the quinoa under cold water.
Cook the quinoa: Combine quinoa with 2 cups of water and a pinch of salt. Bring to a boil, reduce to a simmer, cover, and cook for about 15 minutes.
Sauté the chicken: In a skillet, heat olive oil over medium heat. Add chicken, seasoning with garlic powder, paprika, salt, and pepper. Cook for 6-8 minutes until browned.
Add the veggies: Stir in chopped bell pepper and broccoli. Cook for an additional 5-7 minutes until vegetables are bright and tender.
Mix in chickpeas: Add chickpeas to the skillet and stir everything together. Drizzle with soy sauce if using, and mix well.
Combine with quinoa: Fluff the cooked quinoa and add it to the skillet. Mix until well combined and heated through. Adjust seasoning as needed.
Serve and garnish: Scoop onto plates, top with fresh spinach and Greek yogurt if desired.
Notes
Don’t overcook the chicken to maintain moisture and flavor. Use fresh vegetables for better nutrition.
