A cozy, comforting soup that combines butternut squash and pumpkin with warm spices, perfect for chilly evenings.

Ingredients

  • 1 butternut squash, peeled and diced
  • 2 carrots, diced
  • 1 onion, chopped
  • 2 cups pumpkin puree (canned or homemade)
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 teaspoon garlic powder

Instructions

  1. Sauté the chopped onion and diced carrots in a large pot with a little oil over medium heat until softened, about 5 minutes.
  2. Add the diced butternut squash, pumpkin puree, garlic powder, thyme, salt, and pepper. Cook for another 2-3 minutes to let the spices bloom.
  3. Pour in the vegetable broth and bring the mixture to a boil.
  4. Simmer for about 20 minutes, or until the butternut squash is tender.
  5. Blend in the coconut milk, then use an immersion blender to blend until completely smooth.
  6. Serve the soup warm in bowls, optionally pairing with crusty bread or a side salad.

Notes

Fresh ingredients elevate the flavor. Adjust seasoning to taste before serving.
